A soft, medium-bodied red wine aged in French oak and American oak barrels. The wine is characterized by lingering flavors of cherry and plum with nice acidity. This is a great wine for anyone who enjoys Chianti Classico style wines. “Foch” is an incredible grape when made into a specific style of wine. The earthiness of this fruit shines through in this vintage varietal wine.

Aging: 50/50 used French Oak barrels and New Canton MT+ Barrels for 1 year
Notes from the Winemaker: “Foch” is typically harvested once we have reached maturity on the vine between TA: 9-10 g/l and ~21 brix in the middle of September. Growing season can have a lot to do with the quality of this wine. In 2016 grapes were crushed onto a large number of sacrificial oak tannins. Tank fermentations were allowed to peak at 89˚F. Co-Inoculation with Malolactic bacterial culture MRB31 occurred at 1 day post onset alcoholic fermentations. The wine was fermented to dryness, and ML was allowed to complete off from gross lees but still on fine lees. Foch 16 completed aging in a combination of French oak and Canton oak barrels.
Harvested 9/13/16. Our Foch produced 5.9 tons of fruit. 1-2% under ripe fruit separated at crush. 1-2% disease (very low). The heat of the 2016 growing season sped harvest up by a week.
